1000 Tiny Birds: 2025 edition

So much tapas recently! A quick (supposedly) Monday lunch with Raph finds us at Gambas, sister to eternal Bristol favourite Bravas but much closer. All the classics on board - let’s get some olives in us, let’s get me a croquette, let’s get some patatas bravas, let’s get the classic Bravas/Gambas tortilla, maybe the best in the business, proper oozing out. We mix it up with some exquisitely thin tuna carpaccio, with a tomato dressing and slothered in oil (appreciably so). Some whole sardines are on the daily specials, so I practice my deboning to great effect, and a gorgeous charred hispi cabbage (as is the rage these days) appears too. The real highlights today, though, are the desserts, so good that I don’t mind how much they are pushing into my work day. We split a dark chocolate mousse which is heavily dressed with olive oil, giving it a fragrant kick; we also split the house specialty goxua, a caramel sponge cake that in some way feels reminiscent in flavour profile of a Basque cheesecake. It’s so light and fluffy, topped with cream and an almost marshmallow-y custard, blowtorched to set. Absolutely stunning.
